Shrimp baked in salt

Ingredient

  1. Frozen Raw Shrimp head on shell on from Yummytale
  2. Lemongrass
  3. Pandan leaves
  4. Salt
  5. Water
  6. Chili
  7. Garlic
  8. Coriander root
  9. Lime
  10. Coconut sugar

 

How to Coook

  1. Set Up the Pot: Take a pot or a pan with a lid. Arrange a layer of lemongrass and pandan leaves on the bottom. Add a thick layer of salt on top of the herbs.
  2. Bake the Shrimp: Place the prawns on the bed of salt. Sprinkle another generous layer of salt over the shrimp. Cover the pot with a lid and cook over low to medium heat for about 10-15 minutes, or until the prawns turn pink and are cooked through.
  3. Make the Seafood Sauce: While the prawns are baking, prepare the dipping sauce. In a mortar, pound the chili, garlic, coriander root, and a pinch of salt until they form a coarse paste.
  4. Season the Sauce: Add lime juice and coconut sugar to the mortar. Continue to mix and pound until the sugar dissolves and all ingredients are well combined. Add a small amount of water to adjust the consistency of the sauce.
  5. Serve: Once the shrimp are cooked, take them out of the pot and arrange them on a plate. Serve immediately with the spicy seafood dipping sauce on the side.
