How to Coook
- Set Up the Pot: Take a pot or a pan with a lid. Arrange a layer of lemongrass and pandan leaves on the bottom. Add a thick layer of salt on top of the herbs.
- Bake the Shrimp: Place the prawns on the bed of salt. Sprinkle another generous layer of salt over the shrimp. Cover the pot with a lid and cook over low to medium heat for about 10-15 minutes, or until the prawns turn pink and are cooked through.
- Make the Seafood Sauce: While the prawns are baking, prepare the dipping sauce. In a mortar, pound the chili, garlic, coriander root, and a pinch of salt until they form a coarse paste.
- Season the Sauce: Add lime juice and coconut sugar to the mortar. Continue to mix and pound until the sugar dissolves and all ingredients are well combined. Add a small amount of water to adjust the consistency of the sauce.
- Serve: Once the shrimp are cooked, take them out of the pot and arrange them on a plate. Serve immediately with the spicy seafood dipping sauce on the side.
